This is a delicious and festive way to serve brown rice. An attractive and colorful dish enhanced by all the bright greens and reds from the peas and peppers! Combine in a large bowl: 6 cups cooked brown rice 2 cups peas 1 cup chopped celery 1 cup diced red pepper ½ cup chopped olives 5 tablespoons parsley ½ cup sliced almonds For Vinaigrette combine in another bowl: 1 teaspoon salt 1 teaspoon lemon pepper ½ teaspoon ginger Dash of red pepper 3 tablespoons vinegar 9 tablespoons olive oil Whisk together the vinaigrette ingredients, pour over the combined rice ingredients and chill.
