This is a delicious and festive way to serve brown rice. An attractive and colorful dish enhanced by all the bright greens and reds from the peas and peppers!

Combine In A Large Bowl:
- 6 cups cooked brown rice
- 2 cups peas
- 1 cup chopped celery
- 1 cup diced red pepper
- ½ cup chopped olives
- 5 tablespoons parsley
- ½ cup sliced almonds
For Vinaigrette Combine In Another Bowl:
- 1 teaspoon salt
- 1 teaspoon lemon pepper
- ½ teaspoon ginger
- Dash of red pepper
- 3 tablespoons vinegar
- 9 tablespoons olive oil
Whisk together the vinaigrette ingredients, pour over the combined rice ingredients and chill.
Serve cold!
